Quinoa and zucchini soup.

Quinoa and zucchini soup

I love quinoa. It is so versatile and nutritious and healthy!

This soup is really simple. 1/2 quinia1 1 zuchini, sliced, 1 cup of babcy carrots sliced, 1 cup of bok choy, 1 table spoon of olive oil, veggie broth or boullion cubes.
Take 4 cups of water, when water starts boiling, add veggie broth or 1/2 of a cube, quinoa, have it simmer for about 15 minutes, add chilli powder if you like it spicy, zuchini, carrots  have it all simmer another 5 minutes, add bok choy, simer for another minute. Done!

Baked Apples.
So sorry – I have no pic for that! 🙂
I am not much of an apple girl – I like only apple sauce, apfel strudel and these baked apples.
For one person: one apple sliced, 1 tea spoon of sugar, 1/2 tea spoon of cinnamon, a bit of butter and margarine.
Put apples in a baking dish, mix sugar and cinnamon and srinkle the mix on top of apples, put a bit of butter on apples and put the dish in the oven 350F (180C) for a bout 5 minutes. Yummmm!
