Happy Canada Day to all my fellow Canadians. We are so blessed to be living in this great and multicultural country.

To celebrate our multiculturalism, I have a recipe for you – African peanut soup.

I adopted the recipe I saw at allrecipes.com

You will need:

1/4 cup of brown rice, 3 table spoons of crunchy peanut butter – peanuts only preferably organic, 1 red sweet pepper, 1 onion, 3-4 baby carrots, diced canned tomato – 1/2 of a small can, 1/2 of  bouillon mix vegetable cube., olive oil

Chop an onion and cook it in olive oil until light brown, chop a red pepper and baby carrots and add them to an onion, simmer for about five mins.

Take 4 -5 cups of water, add brown rice, when it is about to boil add a boulion cube and onion-pepper-carrot mix and a canned diced tomato, cook for about 10- 15 minutes minutes, add chilli pepper and chilli powder to taste.

You also have an option of addition a chopped sweet potato to the onion-pepper-carrot mix.
