Vegetable Stew – West African Style









On hot days like this, I crave spicy vegetable dishes. Today, I have tried a recipe I found at I was interested to see how raisins will work in this dish.

And there were:

1 onion, 2 cloves of garlic, 1 sweet red pepper, 7-8 baby carrots, 2 sweet potatoes, one table spoon of raisins, about 2 handfuls of fresh spinach, chili peppers, chili powder, salt, olive oil.

Chop and onion and light brown it in olive oil, chop baby carrots, garlic and a sweet pepper, add to onion, slice sweet potatoes add to onion-pepper mix, add 1/2 cup of water, chili peppers, raisins and chili powder to taste and simmer until water evaporates, add salt and spinach, and cook for another 2 minutes.

Serve on a bed of brown rice made with turmeric to give it nice yellow colour. Makes 3-4 servings.
