Lemon Raw Cookies

I love these cookies: not only they are raw and vegan, but they are not super sweet and have a nice lemony taste. Very easy to make too!

You will need:

50 g cashews

100 g dates

1/2 of a small lemon (about 30-40 g with zest)

1 table spoon of maple syrup

Process cashews in a food processors until they are close to sea slat texture. Then add dates, lemon and maple syrup and process again. The texture will resemble dough. Form small cookies. The yield is approximately 10-12 cookies. Dehydrate in a dehydrator if you have it, if not put them on foil and in a fridge for about 6-8 hours. Each cookie has approximately 65 calories.

  1. Yum…I’m not a fan of cashews but may try almonds or walnuts instead.

    • I think you don’t have to use cashews. Any nuts would do because the cookies will still have a very lemony taste πŸ™‚ You won’t taste nuts at all I would say! Nuts are just good for us πŸ™‚

            • Oh no! Did you manage your cravings or did you make them? It takes only 10 mins max to make them though. I am going to try a new version of them with shredded coconut and will post! You have been warned πŸ™‚ hehehe

            • Thankfully I forgot about it not too soon afterward. But I do want to give them a try and will definitely let you know how they turn out. I’m sure the coconut version will be great too!
