Lemon Coconut Raw Cookies

The second batch of raw cookies I made this week was with shredded coconut.

 

 

 

 

 

 

 

 

 

40 g of lemon with zest

50 g cashews raw or dry roasted

40 g dates

50 g shredded coconut

1 table spoon of maple syrup

Put cashews in the food processor first, process until they have the texture of sea salt, add the rest of the ingredients, process, form small cookies, put in a container and in a fridge. Enjoy. approximately 90 calories in a cookie. Makes 15-18 cookies.
